To coincide with the release of the second volume in Anders Frederik Steen’s series We Never Fold the Same Origami Twice, Apartamento is re-releasing Poetry Is Growing in Our Garden, the first volume in the series and a long-standing Apartamento bestseller. Anders Frederik Steen, one of natural winemaking’s cult figures, began his career as a sommelier in his native Copenhagen—first at Noma, then opening Relæ and Manfreds—before becoming a winemaker in the south of France in 2013. In the eight years since, Anders has filled entire notebooks: reflections on what it means to understand (and misunderstand) wine, tasting it and pairing it, leaving behind the world of restaurants, where the balance between manual skill and abstract philosophy lies in a winemaker’s practice, and the technical minutiae of someone deeply immersed in their craft.
These are his notes on wine’s production and consumption, but they are also the doubts and diversions of any learning process and the labour required to give form to any kind of practice. Over the years they show a person exploring the farthest corners of a discipline to return to the very essence and, in the end, to grow with it.
The book opens with a foreword by French chef Pierre Jancou, whose restaurants, including Racines, Achilles, and Vivant, were among those that redefined the boundaries of Parisian dining in the early 2000s, pairing exceptional cuisine with a wine list that fully eschewed added sulfites. The rest of the volume is broken down into Anders’s day-to-day notes.
About Anders Frederik Steen
Anders Frederik Steen and Anne Bruun Blauert produce their meticulously crafted and highly original wines using ‘grapes and only grapes’. They began making wine in 2013, sourcing grapes from highly regarded growers and collaborating with legendary Jura winemaker Jean-Marc Brignot. Today, the couple and their family are based in Valvignères, Ardèche. In addition to their own vineyards, they harvest alongside friends Gérald and Jocelyne Oustric of La Mazel in Valvignères and with the Bannwarth family in Obermorschwihr, Alsace. Before turning his hand to wine, Anders worked as both a chef and sommelier in top restaurants across Denmark, first as a sommelier at Noma, then going on to open Manfreds and Relae restaurants.
