Madeira: Recipes & Wanderings on the Atlantic Island of Eternal Spring is the fifth volume in Apartamento’s series of cookbooks created in collaboration with Belmond, following Liguria, Penang, Campania, and El Bajío, which offers an exclusive look at culinary communities around the world. This latest volume takes us to the Atlantic island of Madeira, off the northwest coast of Africa, where Nadine Ijewere’s analogue photography captures the splendors of its culinary world and the contours of its nature, intertwined with intermezzos by writer Inês Matos Andrade, who takes the reader on an unhurried stroll through Madeiran cuisine—its secrets, its crafts, and its influences—as it unwinds and delves into the poetic communities that make up the island. At the core of the book are 21 dishes from the kitchens of Reid’s Palace, Belmond’s legendary cliff-top hotel in Funchal, alongside contributions from Claire Ptak of Violet Bakery, food and travel writer Rafael Tonon, and chef Nuno Mendes, who also introduces the book, paying homage to its ecosystem of flavors that echo the continents beyond its shores. Nadine Ijewere is a British photographer known for her intimate, richly colored portraits. Active in both fashion and editorial, in 2018 she became the first Black woman to photograph a *Vogue* cover. Her work focuses on themes of community, identity, and representation, celebrating diverse forms of beauty through a carefully composed visual language.
Introduction by Nuno Mendes
Nuno Mendes is a Portuguese chef known for his contemporary approach to Portuguese cuisine. In 2010 he founded Viajante in London and later took over Chiltern Firehouse. In 2018, he opened Mãos at Blue Mountain School, which earned a Michelin star, and in 2022 he opened Lisboeta in Fitzrovia, a love letter to his home city, Lisbon.
